Vegan Chocolate Mousse Torte

Ingredients

  • Torte: 1⅓ cup flour
  • ⅓ cup cocoa powder
  • 1 tsp baking powder
  • 1 cup white sugar
  • 2 tbsp corn starch
  • 1 tsp salt
  • 5 tbsp olive oil
  • ½ cup soy milk
  • 5 tbsp maple syrup
  • Chocolate Mousse: 4 ripe avocados, pitted and meat scooped out
  • ½ cup soy milk
  • ⅔ cup maple syrup
  • 2 tbsp peanut butter
  • 2 tbsp corn starch
  • 1 tsp salt
  • 1 tsp vanilla extract
  • ¼ cup cocoa powder
  • 1½ cup dark chocolate, melted

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine first 6 dry ingredients.
  3. Add in olive oil, soy milk, syrup, and mix well. I
  4. n a lightly oiled 9 or 10 inch springform pan, pour in mixture.
  5. It will be a bit sticky so use a wet spatula to pour and spread mixture into cake pan.
  6. Bake for 25 minutes.
  7. Take out and allow to cool.
  8. Prepare the filling by placing Avocados, soy milk, syrup, peanut butter, corn starch, salt, vanilla, and cocoa powder in a blender or food processor and blend until smooth.
  9. Add in melted chocolate and process until smooth like mousse!
  10. Smooth out filling on top of cake and cover and freeze for 2 hours or more.
  11. Before serving, allow cake to sit out at room temperature for 10 minutes.
  12. Use a knife to go around, gently, the cake.
  13. Loosen springform, slice, and serve with strawberries!
This easy recipe starts out simply with making the torte.
You will definitely be tempted to eat this mousse, it is like pudding in your mouth.
The longer the cake sits out the more the avocado will taste because of it coming to room temperature. Don’t leave it out, just stick it back in the freezer between servings.
